Tonight’s Dinner (6 Nov 2009) – Fish in Orange and Garlic Sauce

Another experimental recipe of mine that hubby loved.

Fish in Orange and Garlic Sauce
Ingredients:
3 tbsp orange juice
1 tbsp orange peel grated
2 catfish fillet
3 cloves garlic minced
1/6 butter
1/2 tsp salt
1/2 tsp pepper
In a skillet, melt butter. Saute garlic until brown. Remove garlic and set aside.
Season fish with salt, pepper, orange peel and fry on the butter for about 5 minutes per side or until the fish is cooked.
Remove the fish and set aside. Add the remaining orange peel, garlic and orange juice to the remaining butter. Cook for 2 minutes then pour over the fish.
Serve with orange fruit and rice.
Optional, sprinkle parmesan cheese before serving.
