Calamansi Muffins using Squeeze-C Calamansi Concentrate

For months now (or years), I’ve been meaning to bake a muffin or cupcake with our calamansi concentrate as the main flavoring, so I tried to search the web for a Calamansi muffin recipe, and the most search engine result was that of the Famous Real Coffee Boracay Muffins recipe from Pepper.ph. So with my little chef (Janna), we tried to create the said recipe with minor revisions and using our very own Squeeze-C Calamansi Concentrate.

Here are the ingredients:

1/2 cup butter
1 cup sugar
2 pcs eggs
1 1/2 cup all purpose flour
1 tsp baking powder
1/4 tsp salt
1/4 cup milk
2/3 cup Squeeze-c calamansi concentrate
1 tsp olive oil

  1. Mix together dry ingredients in a bowl: flour, baking powder and salt. Set aside.
  2. Mix together milk and calamansi in a bowl, set aside.
  3. Cream butter and sugar for 2-3 minutes.
  4. Add eggs one at a time and mix well.
  5. Add in milk mixture and flour mixture.
  6. Mix until well blended, don’t over mix.
  7. Scoop in non stick muffin pans.
  8. Bake in preheated 350 degrees Fahrenheit oven for 18-23 minutes

Put together the olive oil, milk and the Squeeze-C Calamansi concentrate and mix well. Set aside.

Put together sugar and butter and cream together

Cream the sugar and butter until well blended

Add in the egg one at a time and mix well

Add in the flour mixture (flour, baking powder and salt) and Squeeze-C mixture and blend, but do not over mix

Now we are ready to place them in the baking pan, in our case baking silicon cups, and my eager little helper is having a fine time

We are ready to bake it in the oven

Bake in the oven at 180 degree celsius for about 18-20 minutes, but in our case, we use convection oven and baked it for 30 minutes.

Use a toothpick to test the center if fully cooked. If it comes off clean, then you are good to go, if not, then add a few more minutes in the oven to allow to fully cook
